Summer Truffle Season - A Nice Warm Up

As summer approaches and we start to look forward to the great weather and the pool, there are other more surprising guests that also arrive on the property and are no less welcome. Unknown to most people truffle season actually begins towards the end of May when the first arrival of the ‘Scorsone’ or summer truffle (tuber aestivum) hits its peak. 

Previously thought to be different species to the more prized Burgundy truffle (tuber uncinatum) molecular analysis has proven them to be the same species whose differences derive from environmental factors.


Although less pungent and aromatic than its relation, the Summer Truffle in nonetheless a happy addition to the Umbrian chef’s larder and is prepared locally in the simplest of fashion, grated over hand rolled tagliatelle with a drizzle of extra virgin olive oil or blitzed into a pate and served on warm bruschetta of the local unsalted bread. Later in the year, around the beginning of September we welcome the arrival of the Black Truffle (tuber melanosporum), the wealthy cousin of the humble summer truffle.
